About our squid, octopus & cuttlefish
Fresh squid, octopus and cuttlefish are kitchen heroes — quick to cook, endlessly versatile and deeply flavourful when handled right. Tasman Star stocks whole and cleaned Southern Calamari, Eastern Arrow squid, whole baby octopus and market-size cuttlefish, all Australian-caught and supplied chilled or frozen. Squid tubes take 2 minutes on a screaming hot grill. Baby octopus works beautifully braised in a smoky paprika tomato sauce. Cuttlefish, scored and seared, delivers a sweeter, meatier bite than squid. All products come cleaned, ready-to-cook unless you request whole for the full experience. Calamari tubes are also one of the cheapest quality proteins on our shelf — Bond University and Griffith University students routinely buy a kilo for the week, stir-fry it with garlic and chilli, and stretch it across 4–5 meals for well under what a takeaway dinner costs.
Storage
Keep squid and octopus refrigerated at 0–2°C for up to 2 days. Frozen product holds 3 months at –18°C. Thaw in the fridge overnight before use.
Serving
Cook squid hot and fast (2 minutes total) or low and slow (45 minutes braised) — anything in between turns it rubbery. Score the inside of tubes in a diamond pattern for a tender bite and attractive curl.

Are the squid and octopus cleaned?
Yes — tubes are cleaned and tentacles attached on request. Baby octopus is gutted and beak-removed by default.
What is the difference between squid and calamari?
In Australia, Southern Calamari is a specific squid species prized for its tender, sweet flesh. Arrow squid is firmer and more robust — great for long-braised dishes.
Can I buy whole octopus?
Yes — whole Australian octopus is available to order. Allow 24 hours notice for larger sizes.
How do I stop squid going rubbery?
Cook it either very quickly (under 3 minutes) or very slowly (over 45 minutes). The middle ground is where the texture turns.
Is calamari a good budget protein for students?
Yes — calamari tubes are one of our cheapest quality proteins by the kilo. What is a weekend Mediterranean-style recipe for baby octopus?
Octopus a la gallega: simmer 1kg cleaned baby octopus in salted water with a bay leaf for 35–40 minutes until a skewer slides in easily. Drain, toss with good olive oil, smoked paprika and flaky salt. Serve warm with boiled chat potatoes. Do you deliver to the Gold Coast?
Yes — we deliver fresh seafood across the Gold Coast and Northern Rivers every Monday, Tuesday and Friday. Order before 2pm the day prior to delivery.
How is the seafood packed for delivery?
All orders are packed in insulated cooler bags with frozen gel packs. Chilled items travel at 0–4°C; frozen items arrive at –18°C or colder.
Can I pickup my order instead of delivery?
Yes. Choose pickup at checkout and collect from our Gold Coast facility during business hours.
Are your seafood products Australian?
Wherever possible, yes. Every product clearly labels its country of origin. We prioritise Australian-sourced seafood from Queensland, NSW and Tasmanian fisheries.
