Tasman Star stocks premium Australian oysters, hand-selected from the cool, clean growing regions of the NSW Northern Rivers and Tasmania. We carry Sydney Rock oysters for classic briny flavour and Pacific oysters when creamier, plumper shellfish are in season. Every tray is shucked-to-order or supplied live in the shell so you get peak freshness at the table. Storage
Keep live oysters flat (cup-side down) in the fridge at 4–8°C, covered with a damp cloth. Never submerge in fresh water — they will die. Eat within 3–5 days of harvest for best flavour.
Serving
Serve at 4°C with lemon wedges, mignonette or a dash of Tabasco. Allow 6 oysters per person as an entrée, 12 as a main. Pair with a chilled sparkling wine or dry Riesling.

Are Tasman Star oysters fresh or frozen?
Always fresh — never frozen. Live in-shell oysters arrive still sealed; shucked trays are opened to order the morning of dispatch.
How long do oysters stay fresh after delivery?
Live oysters keep 3–5 days in the fridge. Shucked oysters should be eaten within 24 hours of opening.
Can I order oysters for a party on the Gold Coast?
Yes — order before 2pm the day prior to delivery. We deliver Monday, Tuesday and Friday across the Gold Coast and Northern Rivers.
What is the difference between Sydney Rock and Pacific oysters?
Sydney Rock oysters are smaller with an intense briny finish; Pacific oysters are larger, creamier and sweeter. Both are stocked in season.
How many oysters should I order per person for a party?
Allow 6 oysters per person as an entrée or 12 for oyster-lovers. A tray of 60 covers 10 guests comfortably as a shared starter; for a canal-side or beachfront party where oysters are a feature, order one extra dozen for good measure.
Are oysters safe to eat during pregnancy?
Raw oysters are not recommended during pregnancy because of the risk of Vibrio and Listeria. Cooked oyster dishes — Oysters Kilpatrick, Oysters Mornay and oyster stuffings — are considered a safer option. Speak to your GP or midwife for personalised advice.
Are oysters high in purines for people managing gout?
Oysters sit in the moderate-to-high purine bracket, along with most shellfish. If you are actively managing gout or high uric acid, limit shellfish portions and discuss with your GP. Lower-purine seafood choices include white-flesh fish such as flathead, whiting, snapper and barramundi.
Do you deliver to the Gold Coast?
Yes — we deliver fresh seafood across the Gold Coast and Northern Rivers every Monday, Tuesday and Friday. Order before 2pm the day prior to delivery.
How is the seafood packed for delivery?
All orders are packed in insulated cooler bags with frozen gel packs. Chilled items travel at 0–4°C; frozen items arrive at –18°C or colder.
Can I pickup my order instead of delivery?
Yes. Choose pickup at checkout and collect from our Gold Coast facility during business hours.
Are your seafood products Australian?
Wherever possible, yes. Every product clearly labels its country of origin. We prioritise Australian-sourced seafood from Queensland, NSW and Tasmanian fisheries.
