Storage
Cooked bugs and lobsters keep 2 days at 0–4°C. Green (raw) tails keep 6 months at –18°C when vacuum-sealed. Thaw overnight in the fridge before cooking.

Allow 1 whole bug per person as an entrée, or half a lobster per person as a main. Split lengthways, brush with garlic butter and grill cut-side up for 6–8 minutes.
Frequently asked questions
What is the difference between a Moreton Bay bug and a Balmain bug?
Moreton Bay bugs have eyes on the outer edge of the head and a sweeter, firmer tail. Balmain bugs have eyes closer together and a slightly more delicate texture.
Can I order live rock lobster?
Live Southern Rock Lobster is available seasonally by pre-order. Call ahead to check current supply.
Are your lobsters Australian?
Yes — Southern Rock Lobster from South Australia and Tasmania, Eastern Rock Lobster from NSW.
How do I cook a whole green lobster?
Split lengthways, remove the tract, brush with butter, and grill cut-side up for 8–10 minutes or bake at 200°C for 12 minutes.
How many bugs or lobsters do I need for a milestone dinner of 8–10 guests?
For an entrée course, allow 1 whole Moreton Bay bug per person (8–10 bugs for 10 guests, roughly 2–3kg). For a main, allow half a medium rock lobster (500–600g whole) per guest, so 5 lobsters for 10 people. For a mixed surf-and-turf menu you can drop to 1 bug tail per guest as an entrée plus steak for main. Pre-order 5–7 days ahead for December and January weekends — Gold Coast demand peaks hard in that window.
How far ahead should I pre-order lobster for Christmas or New Year?
For Christmas Eve, Christmas Day, New Year's Eve and Australia Day we recommend placing lobster and bug orders at least 10–14 days ahead. Live and premium grades go first. For Easter, Mother's Day and milestone weekends 5–7 days is usually enough. Once ordered, we confirm availability within 24 hours and hold your stock on the books — no surprises on delivery day.
Do you deliver to the Gold Coast?
Yes — we deliver fresh seafood across the Gold Coast and Northern Rivers every Monday, Tuesday and Friday. Order before 2pm the day prior to delivery.
How is the seafood packed for delivery?
All orders are packed in insulated cooler bags with frozen gel packs. Chilled items travel at 0–4°C; frozen items arrive at –18°C or colder.
Can I pickup my order instead of delivery?
Yes. Choose pickup at checkout and collect from our Gold Coast facility during business hours.
Are your seafood products Australian?
Wherever possible, yes. Every product clearly labels its country of origin. We prioritise Australian-sourced seafood from Queensland, NSW and Tasmanian fisheries.
