
Seared Scallops with Garlic Butter
Tasmanian scallop meat seared golden in a hot pan with garlic butter and a squeeze of lemon. Simple, quick and genuinely special.

Everything you'll need
- 300 g Tasmanian scallop meat$24.00
- 2 tbsp Garlic butter$8.00
- 1, halved Lemons$4.00
- a handful, chopped Fresh parsley
- to season Salt and white pepper
The method

Pat the scallop meat very dry with paper towel. Season with salt and white pepper.

Heat a heavy pan over high heat until smoking. Add a thin film of oil.

Add the scallops in a single layer without crowding. Sear for 90 seconds without moving until a deep golden crust forms. Turn and cook 30 to 45 seconds more.

Reduce heat to low. Add the garlic butter and let it melt, spooning it over the scallops as it foams.

Squeeze over the lemon, scatter with fresh parsley and serve immediately.
