
Thai Green Barramundi Curry

Everything you'll need
- 4 pieces Barramundi portions (skin on)$14.00
- 1 jar Green curry cooking sauce$10.50
- 400 ml Coconut milk
- 2 cups, cooked to serve Jasmine rice
- to serve Fresh coriander and lime
The method

Pat the barramundi portions dry and season lightly with salt.

Heat a splash of oil in a wide pan over medium-high heat. Sear the fish skin side down for 3 minutes until golden, then turn and cook 2 minutes more. Remove and set aside.

Pour the green curry sauce into the same pan. Add coconut milk and stir to combine. Bring to a gentle simmer over medium heat.

Nestle the fish back into the sauce. Spoon sauce over the top, cover and cook for 5 minutes until the fish is cooked through.

Serve over steamed jasmine rice with fresh coriander and lime wedges.
