Fresh Oysters: Start Here
Put a dozen oysters on ice while the BBQ heats up. Serve them natural with a squeeze of lemon, or with Tabasco and a splash of red wine vinegar. Allow 6–8 oysters per person as a starter. For a group of six, three dozen disappear faster than you expect.
Whole Barramundi on the Grill
Whole barramundi or snapper, scored and stuffed with lemon slices, garlic, and fresh herbs, is the showpiece of a Labour Day spread. Place directly on a medium grill or wrap in foil. In 15–20 minutes it's done.
Allow 600–800g whole fish per adult. A 1.2 kg barramundi feeds two comfortably; a 2 kg snapper feeds three to four. The bones keep the flesh moist during grilling, and the scored skin chars into something worth eating on its own.
