Is Flake Shark? What Australian Fish and Chip Shops Actually Sell
TL;DR: Yes. Flake is shark, usually gummy shark. It is boneless and mild, which is why it dominates Australian fish and chips. It is not a different species, and it is not the best fish you can fry at home.
Flake is shark. That is the whole answer. The name is a shop word, not a scientific one. When an Australian fish and chip menu says flake, it almost always means a boneless fillet of gummy shark, sometimes school shark, battered and fried.

Gummy shark is a small, bottom-living shark. It does not look like a movie shark on the plate. The fillet is white, bone-free, and breaks into large soft flakes, which is where the nickname comes from.
Why shops use it
Three practical reasons, none of them mysterious:
- No bones. Parents order it.
- Mild flavour. It does not taste "fishy" to people who rarely eat seafood.
- It fries evenly. The fillet is even thickness, so the batter and the flesh finish together.
Those are real advantages. They are also the same reasons flake is easy to overcook at home. Without a thick batter, the flesh goes dry and woolly.
Mercury and how often to eat it
Shark sits higher on the food chain and lives longer than flathead or whiting, so mercury can accumulate. Food Standards Australia New Zealand groups shark, including flake, with swordfish, marlin and orange roughy as species to limit.
FSANZ advice in plain terms:
- Most adults: flake as an occasional takeaway is fine.
- Pregnant women, young children, and people eating seafood most days: choose low-mercury fish. Flathead, whiting, snapper, bream, barramundi and Tasmanian Atlantic salmon are the usual list.
That is a frequency question, not a poison label. One battered flake from the shop is not an emergency. Making it the household weekly fish is the bit to rethink.
What to cook at home instead
For Gold Coast fish and chips at home, buy flathead fillets. Dust in flour, or crumb, and fry 2 to 3 minutes a side. The flesh is sweet, firm enough to pick up, and almost boneless if we have pin-boned it.
