About our sashimi
Sashimi is the purest expression of great seafood — and great sashimi starts with sushi-grade fish, a sharp knife and a confident hand. Tasman Star cuts fresh sashimi daily from Tasmanian Atlantic salmon, Yellowfin tuna, kingfish, snapper, Hokkaido scallops and seasonal specialities like kampachi and bonito. Every order is cut against the grain into classic 8mm slices, arranged on ice and delivered chilled the same day it is cut. For enthusiasts, we also stock whole sashimi-grade blocks so you can slice fresh at the table. All our sashimi fish is sourced from accredited suppliers and handled under strict cold-chain controls. Dinner-party hosts in Broadbeach Waters, Main Beach and Mermaid Beach order our sashimi platters as a show-stopping shared entrée, and corporate lunches in Bundall, Southport and Surfers Paradise pre-order sashimi-and-sushi boxes for client meetings — both are our top two sashimi use-cases, and both are booked 24 hours ahead.
Storage
Eat sashimi within 24 hours of delivery. Keep chilled at 0–2°C, covered, and lay flat to prevent bruising. Never freeze pre-cut sashimi.
Serving
Serve on chilled plates with wasabi, soy and shredded daikon. Allow 80–120g per person as an entrée. Dip fish-side (not rice-side) lightly in soy to preserve the delicate flavour.

Is your sashimi fish safe to eat raw?
Yes — all sashimi product is sushi-grade, sourced from accredited Australian and imported suppliers, and handled under strict cold-chain controls.
What sashimi do you stock?
Core range: Atlantic salmon, Yellowfin tuna, kingfish, snapper and scallops. Seasonal additions include bonito, kampachi and hiramasa.
Can I buy a whole sashimi block to slice at home?
Yes — we stock sashimi-grade salmon and tuna blocks sized 300g, 500g and 1kg for home sashimi.
Do you supply sashimi for functions?
Yes. Pre-order sashimi platters 24 hours ahead. We can build platters for 4, 10 or 20 guests.
How much sashimi do I need for a dinner party of 8–10 guests?
As a shared entrée, allow 80–120g of sashimi per person. A 1kg sashimi-grade salmon block plus a 500g tuna block (about 1.5kg total) feeds 10 as an entrée — roughly 150g pp which lets everyone go back for seconds. Pre-order 24 hours ahead and we cut it the morning of your dinner. For a full Gold Coast milestone dinner in Broadbeach Waters, Main Beach or Mermaid Beach, pair sashimi with a sushi platter and a whole steamed fish — three courses, zero hot kitchen time.
Do you deliver to the Gold Coast?
Yes — we deliver fresh seafood across the Gold Coast and Northern Rivers every Monday, Tuesday and Friday. Order before 2pm the day prior to delivery.
How is the seafood packed for delivery?
All orders are packed in insulated cooler bags with frozen gel packs. Chilled items travel at 0–4°C; frozen items arrive at –18°C or colder.
Can I pickup my order instead of delivery?
Yes. Choose pickup at checkout and collect from our Gold Coast facility during business hours.
Are your seafood products Australian?
Wherever possible, yes. Every product clearly labels its country of origin. We prioritise Australian-sourced seafood from Queensland, NSW and Tasmanian fisheries.
