Keeping it fresh
Carry in an insulated cooler and keep at 0–4°C until serving. Enjoy promptly after collection or delivery, on the day supplied and before the stated use-by time. Keep rice, fish and toppings chilled together. Do not leave the tray on a buffet or in a warm car.
