How to Cook King Crab Clusters at Home
TL;DR: King crab clusters in Australian shops are almost always pre-cooked and frozen. Thaw them, then warm them. Steam 5 to 7 minutes for a 500 to 600 g cluster. Do not boil them like raw crab.
King crab looks intimidating because the legs are long and the shell is thick. The cooking is the opposite. Someone on a boat in the Bering Sea, or at a plant, already cooked it. Your job is to thaw it gently and get it hot without wringing the moisture out.
We sell king crab clusters at 500 to 600 g. That is a solid serve for one hungry person, or a share for two on a platter.
Timing table by cluster weight
Times assume the cluster is thawed.

The meat is ready when a knife in the thickest joint comes out steaming. If you see the meat shrinking away from the shell, you have gone too far.
Steam, the method that wastes the least meat
- Thaw overnight in the fridge on a tray.
- Bring a pot of water to a simmer with a steamer basket. The water should not touch the crab.
- Lid on. Time from the table above.
- Pull, rest one minute, crack.
Butter and lemon at the table. Garlic butter if you want it. The crab already tastes of crab. Do not drown it.
Oven, if the steamer is busy
Lay clusters in a tray, add a splash of water, cover tightly with foil, 200°C. Uncover for the last 2 minutes if you want a little colour on the shell. Same doneness test.
Grill, for Father's Day
Father's Day 2026 is Sunday 6 September. King crab on a covered barbecue next to split bugs is a backyard flex that still takes under 10 minutes.
Brush with garlic butter, lid down, medium heat, turn once. Keep a spray bottle of water nearby. Crab shell can scorch.

How to crack a cluster without spraying the kitchen
Work over a wide bowl.
- Twist the legs off the shoulder.
- Crack each segment at the joint with crackers or the back of a heavy knife.
- Push the meat out with a skewer or a thin teaspoon handle.
- The shoulder knuckle hides a surprising amount of meat. Do not throw it away.
What not to do
- Do not boil in a huge pot of rolling water. You are washing flavour into the pot.
- Do not microwave. The shell arcing is real, and the meat rubberises.
- Do not thaw on the bench in Gold Coast heat. Fridge or sealed-bag cold water only.
- Do not refreeze a cluster you have thawed.
Leftover picked meat: airtight, fridge, eat within 24 hours in fried rice or a roll. It will not improve.
