Snapper in Australia: Which One You Have and How to Cook It

TL;DR: Snapper is several fishes. Cook by weight, not by the nickname. A 1 kg whole snapper bakes 25 to 30 minutes at 200°C. A 300 g skin-on portion pan fries 3 to 4 minutes skin side, then 1 to 2 minutes flipped.


"Snapper" on an Australian ticket can mean pink snapper from the south, a tropical red snapper from the reef, gold band from deeper water, or a knobby local fish. They all eat well. They do not all cook in the same number of minutes.

Pink snapper (Chrysophrys auratus) is the southern classic, often labelled snapper or squire. True red emperor is a different reef fish again, and we will say emperor on the ticket if that is what it is. If you are unsure, ask. The staff would rather name the fish than watch you undercook a 2 kg gold band on a timer written for a 1 kg knobby.

Whole snapper cook times

Oven 200°C, fish oiled, cavity salted, lemon and herbs inside if you like.

Done test: slide a knife to the backbone behind the head. Flesh should be opaque and just flake. Rest 3 minutes. Carry-over heat finishes the collar.

300 g portions, weeknights

These portions are the honest weeknight snapper.

  1. Pat dry. Salt the skin. Wait 10 minutes. Pat again.
  2. Medium-high pan, thin oil.
  3. Skin down. Press with a spatula for 30 seconds.
  4. 3 to 4 minutes. Skin should be golden and loud.
  5. Flip. 1 to 2 minutes. Off the heat.

Father's Day, whole fish on the barbecue

Sunday 6 September is Father's Day. A 1 kg knobby snapper on the barbecue, next to prawn skewers, is a better dad lunch than another steak. Score the sides, oil, salt, lid down.
