Milkfish 850 g–1 kg is a Filipino staple fish with mild, slightly oily flesh for grilling and sinigang. Score and barbecue whole, or simmer in tamarind soup. Distinctive regional favourite when fresh. Allow one medium whole fish per person, or one large fish for two.
