Rainbow Trout Whole

Whole rainbow trout has delicate pink flesh and a mild, nutty flavour. Pan-fry in butter, bake with almonds, or hot-smoke. Freshwater favourite that cooks quickly and evenly. Allow one medium whole fish per person, or one large fish for two.
