Hiramasa kingfish (yellowtail kingfish) is Australia's premium kingfish for sashimi and roasting. Serve raw as sashimi, sear as tataki, or roast portions with miso glaze. Rich, buttery flesh with clean ocean character. Allow one medium whole fish per person, or one large fish for two.
