Whole Tasmanian salmon 4–5 kg is a centrepiece fish with rich, oily flesh ideal for roasting or hot-smoking. Scale, gut and roast whole with dill and lemon, or portion into steaks for the barbecue. Order ahead for events. Allow one medium whole fish per person, or one large fish for two.
