The Best-Value Species in 2026

Whiting and flathead are the workhorses of affordable seafood. Both are mild, boneless-friendly, and hold up to any cooking method. At Tasman Star, flathead fillets and whiting consistently come in below barramundi on price — and for fish tacos or pan-fries, they're just as good.

Mackerel and sardines are genuinely underrated. Whole mackerel is one of the cheapest proteins at the fish counter, with firm flesh that grills well and a strong flavour that handles bold marinades. For prawns, frozen beats fresh on value every time. A 1 kg bag of frozen green (raw) banana prawns typically costs less than half the equivalent weight in fresh king prawns, and the quality difference is negligible once they're in a pasta or stir-fry. Buy fresh king prawns when they're the centrepiece; use frozen for everything else.

Canned tuna remains the most efficient everyday seafood protein on the shelf. Two 185g cans cover a family of four in a pasta or rice bowl at under $4.

Meals Under $15 Per Person

Fish tacos: Two whiting fillets crumbed and pan-fried, served in corn tortillas with slaw and lime crema. For four people you're using roughly 600g of fish. Budget around $10–12 for the protein and filling.

Prawn pasta: 500g of frozen banana prawns, garlic, chilli, cherry tomatoes, and spaghetti. Feeds four solidly. The prawns defrost in 10 minutes under cold running water — no planning required.

Grilled whiting: Whole whiting scored, seasoned with salt and olive oil, grilled for 6–8 minutes per side. Serve with a green salad and bread. One of the fastest and cheapest dinners you can put on a Gold Coast table.

Mackerel rice bowl: Pan-seared mackerel fillet over steamed rice with cucumber, shredded ginger, and soy. A 400g mackerel fillet feeds two adults for around $7–9 total.

Buying in Bulk and Freezing

Most seafood freezes well if handled correctly. Prawns, flathead fillets, and squid tubes all freeze cleanly for up to three months without significant texture loss.

The practical approach: buy 1–1.5 kg of a single species when it's well-priced, portion it into meal-sized freezer bags (roughly 150–200g per person), and label with the date. Defrost in the fridge overnight or under cold running water. Never defrost on the bench at room temperature.

Whole fish freezes better than fillets because the bones protect the flesh. Ask at the Tasman Star counter to have fish gutted and wrapped before freezing.
