Ruby snapper 1–1.5 kg is a premium reef snapper with firm, sweet flesh and striking skin. Roast whole Asian-style with ginger and soy, or fillet for pan-frying. Wild reef-caught quality. Allow one medium whole fish per person, or one large fish for two.
